Anyone Ready for Soup?

This soup recipe has special meaning to us since a dear friend made it for us when our son Eric had leukemia and friends were bringing us meals.
With a fire in the fireplace and a big pot of soup on the stove I’m feeling ready for fall. Then Jill at Blessed Beyond a Doubt said she was going to post all kinds of soup recipes and I decided to add one of our favorites – Potato Soup.

This soup recipe has special meaning to us since a dear friend made it for us when our son Eric had leukemia and friends were bringing us meals. It is ever so easy and warms up well. We usually make a big pot and have it with warm bread or rolls for several meals. Let me know what you think after you try it.

POTATO SOUP

3 + medium potatoes cubed
1-2 stalks celery chopped
1 onion chopped
2-3 grated carrots
4 cups water
4 cups chicken stock
2 tbs. butter
1 cup milk
2 Tbs. chopped parsley
1 cup Velveeta cheese
Dash pepper
Cubed ham

Cook potatoes, onion, celery, and carrots in water and
stock for about 45 minutes. Add cheese, butter,
parsley and ham.

Whenever I type a recipe to add to my box I put this Scripture at the bottom. Then when I take it out I’m reminded to pray for the person who gave it to me. Praying for you Kathy.

In keeping with the fall theme of this post I wanted to share how we make fire-starters to use in our fireplace, back yard bonfires, or camping. After I finished I saw in my mind’s eye how I should have taken photos of the process so you could see how quick and easy it is. Since I didn’t I found this website that did. It is very similar to how we did ours, other than we use sawdust rather than dryer lint since we chop our own wood and always have plenty of sawdust around. This way I don’t have to save dryer lint and it works well either way.

    Ahhh, I love soup! And I had a wonderful recipe for potato soup that I lost years ago. 🙁 So, I’m always willing to try new ones. Blessings to you!

    P.S.: How is your son? Since I don’t know you very well (just found your website about three weeks ago), I wasn’t sure how long ago this was. I hope he is healthy and happy!

      My son is 21 years old and a delight to his mother. He loves the Lord and he loves life. He lives at home while starting his own computer repair business and studying to take more computer certification exams. I am thankful for each day with him.

    Hi Phyllis,

    I love your idea of typing out recipes (do you use a typewriter or a computer?) and adding the scripture verse to remind you to pray for the kind individual that shared the recipe! 🙂

      Hi Shannon,
      I use my computer and I store them on it too in a file folder so its easy to share them when someone asks. I can cut and paste them into an email,print them, or attach them to an email – whichever works best. Thanks for stopping by.

    I love finding new recipes, I get sick of making the same things all the time. I also love soup, and potato is one of my favorites, pinning.

      I do too! I had a favorite aunt who was still collecting recipes into her 80’s – that’s going to be me, I hope. Let me know what you think of it after you try it.
