
Bacon Cheeseburger Meatloaf By Phyllis Sather
2 slices bread, torn into small pieces
1/2 cup milk
1 1/2 pound ground beef
6 slices bacon cooked and crumbles
1 cup Cheddar cheese shredded
1/4 cup finely chopped onion
1 clove garlic finely chopped
1 egg slightly beaten
1/2 cup ketchup
1 tbls brown sugar
Heat oven to 350 degrees. Line 9 X 5 loaf pan with foil; spray with cooking spray.
In a large bowl, mix bread, and milk. Let stand for 5 minutes so bread absorbs milk.
Add beef, all but 2 Tabls. bacon, cheese, onion, garlic, and egg. Mix until well blended.
Shape mixture and place into pan.
In a small bowl mix together the ketchup and brown sugar; spread on top of loaf.
Top with reserved crumbled bacon.
Bake uncovered approximately 1 hour until internal temp. reaches 160 degrees. Cool for 5 minutes before cutting.
